A delightful salad featuring roasted Brussels sprouts, crisp apples, and crunchy walnuts, celebrating the flavors of autumn.


Ingredients

  • 1 pound fresh Brussels sprouts
  • 1 large apple (honeycrisp or Granny Smith)
  • ½ cup walnuts, roughly chopped
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • Sea salt and freshly cracked pepper, to taste
  • Optional: thyme or parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Trim and halve the Brussels sprouts. Toss in a bowl with 1 tablespoon of olive oil, salt, and pepper.
  3. Spread evenly on a baking sheet and roast for 20-25 minutes, stirring halfway through.
  4. Toast the walnuts in a small pan over medium heat until fragrant.
  5. In a bowl, whisk together the remaining olive oil, balsamic vinegar, honey, and salt to make the dressing.
  6. Once the sprouts have cooled slightly, combine them with the diced apple and toasted walnuts in a large bowl. Drizzle the dressing on top and toss gently.
  7. Serve immediately, or let sit for a few minutes to meld flavors.

Notes

Add crumbled feta or goat cheese for a creamy finish. Wait to add apples until just before serving for extra crunch.
