Description

A comforting and hearty lasagna-inspired soup made in a slow cooker, perfect for cozy family dinners.


Ingredients

  • 1 lb ground beef or turkey
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 4 cups chicken or vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 8 oz lasagna noodles, broken into thirds
  • 1 cup ricotta cheese
  • 2 cups mozzarella cheese, grated
  • Salt and pepper to taste

Instructions

  1. Brown the meat in a skillet, adding onions and garlic halfway through.
  2. Transfer the cooked meat into the Crockpot.
  3. Add diced tomatoes, tomato sauce, broth, and spices; stir gently.
  4. Nestle in the broken lasagna noodles.
  5. Set the Crockpot on low for 6-8 hours or high for 3-4 hours.
  6. About 30 minutes before serving, stir in ricotta and mozzarella.
  7. Taste and adjust seasoning before serving.

Notes

For a thicker soup, reduce the liquid slightly or add a cornstarch slurry. Do not overcook the noodles as they will soften in residual heat.
