A comforting and hearty lasagna-inspired soup made in a slow cooker, perfect for cozy family dinners.
Ingredients

- 1 lb ground beef or turkey
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (28 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 4 cups chicken or vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 8 oz lasagna noodles, broken into thirds
- 1 cup ricotta cheese
- 2 cups mozzarella cheese, grated
- Salt and pepper to taste
Instructions
- Brown the meat in a skillet, adding onions and garlic halfway through.
- Transfer the cooked meat into the Crockpot.
- Add diced tomatoes, tomato sauce, broth, and spices; stir gently.
- Nestle in the broken lasagna noodles.
- Set the Crockpot on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in ricotta and mozzarella.
- Taste and adjust seasoning before serving.
Notes
For a thicker soup, reduce the liquid slightly or add a cornstarch slurry. Do not overcook the noodles as they will soften in residual heat.
