Description

A comforting Crock Pot dish with tender chicken in a creamy, herby sauce, perfect for family dinners.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 oz cremini or button mushrooms
  • 1 cup sun-dried tomatoes
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh thyme, chopped
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Sauté the mushrooms in a skillet with olive oil until golden brown, then transfer to the crock pot.
  2. Season chicken breasts with salt and pepper and place them over the mushrooms in the crock pot.
  3. In a bowl, whisk together heavy cream, garlic, sun-dried tomatoes, herbs, and chicken broth. Pour over the chicken.
  4. Cook on low for 6-7 hours or on high for 3-4 hours until the chicken is fork-tender.
  5. Gently stir the sauce after cooking and serve hot, garnished with fresh herbs if desired.

Notes

For a lighter version, substitute heavy cream with coconut cream. Be patient while cooking to allow flavors to develop.
