- 4 boneless, skinless chicken breasts
- 8 oz cremini or button mushrooms
- 1 cup sun-dried tomatoes
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh thyme, chopped
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Sauté the mushrooms in a skillet with olive oil until golden brown, then transfer to the crock pot.
- Season chicken breasts with salt and pepper and place them over the mushrooms in the crock pot.
- In a bowl, whisk together heavy cream, garlic, sun-dried tomatoes, herbs, and chicken broth. Pour over the chicken.
- Cook on low for 6-7 hours or on high for 3-4 hours until the chicken is fork-tender.
- Gently stir the sauce after cooking and serve hot, garnished with fresh herbs if desired.
Notes
For a lighter version, substitute heavy cream with coconut cream. Be patient while cooking to allow flavors to develop.
