Description

Deliciously crispy breadsticks made from day-old sourdough, topped with gooey cheese and fresh herbs.


Ingredients

  • 1 day-old sourdough loaf or sourdough baguette
  • 4 tablespoons butter or olive oil
  • 2 cloves fresh garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1 cup sharp cheese (cheddar or Pecorino)
  • 2 tablespoons fresh herbs (rosemary, thyme, or oregano)
  • Salt and pepper to taste
  • Optional toppings: sautéed mushrooms, caramelized onions, red pepper flakes

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice the day-old sourdough loaf lengthwise into 1-inch wide sticks, keeping the crust intact.
  3. Melt butter with minced garlic in a small saucepan, then stir in chopped herbs along with salt and pepper.
  4. Brush each breadstick with the garlic-herb butter generously.
  5. Layer mozzarella and a sharper cheese evenly on each stick and press lightly.
  6. Bake for 10–14 minutes until cheese is melted and edges are golden-brown. Optionally, broil for an additional 1–2 minutes for extra crispness.
  7. Remove from the oven, let cool for 2–3 minutes, sprinkle with flaky sea salt and chopped parsley, and serve warm.

Notes

For a vegan version, use plant-based butter and vegan cheese. For a gluten-free option, substitute with gluten-free bread.
