Description

Crispy smashed potatoes with a crunchy exterior and fluffy interior, perfect as a side dish for any meal.


Ingredients

  • 1 lb small potatoes (Yukon Gold or red)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh rosemary, thyme, or parsley (or dried herbs)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Boil the potatoes in salted water until fork-tender, about 15-20 minutes.
  2. Drain the potatoes and let rest for 5 minutes to dry.
  3. Preheat the oven to 450°F (232°C) and line a baking sheet with parchment paper.
  4. Gently smash the potatoes on the baking sheet to about ¾ inch thickness.
  5. Drizzle with olive oil and sprinkle with minced garlic, herbs, salt, and pepper.
  6. Bake for 20-25 minutes, flipping halfway through, until golden brown.
  7. Let cool slightly before serving.
