Ingredients

- 1 lb small potatoes (Yukon Gold or red)
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tbsp fresh rosemary, thyme, or parsley (or dried herbs)
- Salt, to taste
- Black pepper, to taste
Instructions
- Boil the potatoes in salted water until fork-tender, about 15-20 minutes.
- Drain the potatoes and let rest for 5 minutes to dry.
- Preheat the oven to 450°F (232°C) and line a baking sheet with parchment paper.
- Gently smash the potatoes on the baking sheet to about ¾ inch thickness.
- Drizzle with olive oil and sprinkle with minced garlic, herbs, salt, and pepper.
- Bake for 20-25 minutes, flipping halfway through, until golden brown.
- Let cool slightly before serving.
