Description

A comforting and savory dish featuring golden, crunchy rice with a tender center, perfect as a side or main dish.


Ingredients

  • 3 cups cooked short-grain rice, cooled and slightly dried
  • 2 tablespoons vegetable oil
  • 2 tablespoons unsalted butter
  • 8 ounces cremini or shiitake mushrooms, sliced
  • 1 small shallot, finely diced
  • 2 garlic cloves, minced
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon white miso (optional)
  • 2 tablespoons chopped chives or parsley
  • Juice of 1/2 lemon
  • Salt and pepper to taste
  • Optional: 2 eggs, cooked sunny-side-up; toasted sesame seeds; chili oil

Instructions

  1. Prepare the rice: fluff the cooled rice and break up any large clumps; season lightly with salt and a teaspoon of sesame oil if desired.
  2. Form the rice cake: heat a nonstick or well-seasoned cast-iron skillet over medium heat. Pack the rice into a stainless-steel ring or a small bowl, creating a cake about 3/4-inch thick. Invert the ring onto the skillet to release the cake.
  3. Create the crust: add oil and butter to the skillet around the rice, and cook undisturbed for 6–8 minutes, until the bottom is golden and aromatic.
  4. Sauté the mushrooms: in a separate pan with a teaspoon of oil, sauté shallots until translucent, add mushrooms and garlic, cooking until browned. Stir in soy sauce and miso, then reduce until glossy.
  5. Flip or finish in the oven: carefully flip the rice cake or slide it onto a baking sheet and broil for 2–3 minutes, until crispy on top.
  6. Assemble and finish: transfer the rice to a serving plate, spoon mushroom mixture on top, scatter herbs, and squeeze lemon juice over it. Optionally, add a soft-cooked egg on top.

Notes

For best results, use day-old rice and allow it to cool properly before cooking. Experiment with different toppings and flavors to suit your taste.
