- 2 cloves fresh garlic, minced

- 1 teaspoon sesame oil
- 1/4 cup neutral oil (canola, vegetable, or peanut) for frying

Instructions
- Freeze the steak for 20β30 minutes, then slice it thinly across the grain.
- Toss the slices lightly in cornstarch, shaking off excess.
- In a small bowl, combine soy sauce, brown sugar, water, ginger, garlic, and sesame oil until the sugar dissolves.
- Heat oil in a skillet over medium-high heat. Add beef in a single layer and cook without crowding.
- Turn the beef once itβs golden, and remove to a rack to keep crisp.
- Reduce heat to medium, pour out excess oil, add the sauce mixture, and bring to a simmer until slightly thickened.
- Return beef to the pan and toss until evenly coated. Garnish with scallions and sesame seeds before serving.
