Ingredients

  • ½ cup grated Pecorino Romano cheese
  • ½ cup unsalted butter, melted
  • 2 tablespoons finely chopped fresh herbs (like parsley, basil, and oregano)
  • Pinch of salt
  • Pinch of black pepper

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, combine the flour, grated cheeses, and chopped herbs.
  3. Melt the butter and let it cool slightly before adding it into the dry mixture.
  4. Mix until a soft, cohesive dough forms. If too dry, add a tablespoon of cold water at a time.
  5. Roll the dough into small balls, then flatten each ball into a ¼-inch thick disk.
  6. Bake for about 15 minutes or until golden-brown, flipping halfway for even crisp.
  7. Let cool completely on a wire rack before serving.

Notes

For extra crunch, bake for a few more minutes but avoid burning. These crackers can be served with dips or as part of a charcuterie board.
