  • 1 ripe avocado
  • 2 slices of bread
  • Salt, to taste
  • Pepper, to taste
  • Olive oil

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Grate the potatoes and place them in a clean kitchen towel to squeeze out excess moisture.
  3. Spread the grated potatoes on the prepared baking sheet, drizzle with olive oil, and season with salt and pepper.
  4. Bake for 20-25 minutes, or until golden and crispy.
  5. Toast the slices of bread in the meantime.
  6. Mash the avocado in a bowl, adding salt, pepper, and optional lime juice to taste.
  7. Top each slice of toasted bread with a layer of mashed avocado and then add a generous amount of crispy hashbrowns.
