- 2 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 1 cup panko breadcrumbs
- 1/4 cup fresh dill
- 2 cloves garlic, minced
- 2 eggs, beaten
- Salt and pepper to taste
- 2 tablespoons lemon juice
- Bread for serving (buns, baguette, or your choice)
Instructions
- Flatten the chicken breasts to about ½ inch thick using a mallet.
- Combine flour, salt, pepper, and minced garlic in a bowl. Coat the chicken and marinate in lemon juice and dill for at least 30 minutes.
- Set up an assembly line with bowls for flour, beaten eggs, and panko breadcrumbs mixed with dill.
- Coat each piece of chicken in the flour, then dip in egg, and finally coat with breadcrumbs.
- Heat oil in a skillet over medium heat and fry the chicken for about 5-6 minutes per side until golden brown and cooked through (internal temperature of 165°F).
- Assemble the sandwich with your choice of bread and add fresh lettuce and tomato.
- Serve immediately for best crunch.
Notes
Allow the chicken to rest on paper towels for better crispness. Avoid overcrowding the skillet while frying.
