Description

A delightful crispy dill chicken sandwich that combines crunchy textures with juicy chicken and fresh herbs, perfect for any meal.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 1/4 cup fresh dill
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • Salt and pepper to taste
  • 2 tablespoons lemon juice
  • Bread for serving (buns, baguette, or your choice)

Instructions

  1. Flatten the chicken breasts to about ½ inch thick using a mallet.
  2. Combine flour, salt, pepper, and minced garlic in a bowl. Coat the chicken and marinate in lemon juice and dill for at least 30 minutes.
  3. Set up an assembly line with bowls for flour, beaten eggs, and panko breadcrumbs mixed with dill.
  4. Coat each piece of chicken in the flour, then dip in egg, and finally coat with breadcrumbs.
  5. Heat oil in a skillet over medium heat and fry the chicken for about 5-6 minutes per side until golden brown and cooked through (internal temperature of 165°F).
  6. Assemble the sandwich with your choice of bread and add fresh lettuce and tomato.
  7. Serve immediately for best crunch.

Notes

Allow the chicken to rest on paper towels for better crispness. Avoid overcrowding the skillet while frying.
