Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup mushrooms (cremini or button)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup cheddar cheese, shredded
  • 1 cup flour (for dough)
  • 1/2 cup cold butter (for dough)
  • 1/4 cup ice water (for dough)
  • Salt and pepper to taste
  • 1 egg (for egg wash)
  • Olive oil (for sautéing)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Sauté onions until translucent, add garlic, and cook for an additional minute.
  3. Stir in mushrooms and cook until they release their juices, about 5-7 minutes. Add shredded chicken, season with salt, pepper, and herbs, and stir in cheddar until melted. Set aside to cool.
  4. Roll out the dough on a floured surface, cut into circles about 4-5 inches in diameter.
  5. Spoon a generous portion of filling onto one half of the dough circle, fold over, and seal the edges with a fork.
  6. Brush the tops with egg wash and place on a lined baking sheet.
  7. Bake for 25-30 minutes or until golden brown and crispy.

Notes

Feel free to customize the filling with black beans, different cheeses, or even swap chicken for pulled pork.
