Description

A fun and spooky dish perfect for Halloween, featuring spaghetti topped with creamy eyeballs made from mozzarella and olives.

Ingredients

  • Spaghetti (or any pasta you prefer)
  • Fresh mushrooms (like cremini or portobello)
  • Spinach
  • Minced garlic
  • Ricotta cheese
  • Mozzarella balls
  • Black olives
  • Marinara sauce

Instructions

  1. Cook the Pasta by boiling salted water and cooking spaghetti until al dente.
  2. Sauté the Filling by heating olive oil and sautéing minced garlic and chopped mushrooms until golden (about 5–7 minutes).
  3. Incorporate Spinach by folding in the spinach until wilted, seasoning with salt and pepper.
  4. Mix the Filling by removing from heat and adding ricotta, combining until well mixed.
  5. Form the Eyeballs by pressing a slice of black olive into the center of mozzarella balls.
  6. Plate the Dish by adding marinara sauce at the bottom of a bowl, layering spaghetti, and placing eyeballs on top.
  7. Garnish with fresh herbs like basil or parsley.
  8. Serve and Enjoy your Creepy Spaghetti Eyeballs!

Notes

Ensure not to overcook the spaghetti and season well with salt and pepper. Let the skillet cool slightly before mixing in the ricotta to avoid scrambling.
