- 3 cups whole milk
- 1 pinch nutmeg

- 2–3 cups sliced mushrooms
- 2 cups chopped spinach
- 15 ounces ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- Fresh basil and thyme for seasoning
- Olive oil for sautéing
Instructions
- Preheat your oven to 375°F (190°C).
- Melt the butter in a saucepan over medium heat and whisk in the flour to create a roux.
- Gradually add the milk, whisking continuously until thickened. Season with nutmeg, salt, and pepper.
- Sauté the mushrooms in olive oil until golden, then add spinach until wilted. Season with herbs.
- In a bowl, mix ricotta cheese, mozzarella, Parmesan, and an egg until smooth.
- Assemble the lasagna by layering béchamel, noodles, ricotta mixture, sautéed vegetables, and mozzarella in a baking dish.
- Cover with foil and bake for 25 minutes, then remove foil and bake for 15 more minutes until golden.
- Let it rest for 10 minutes before serving.

Let the béchamel sauce simmer gently for the best flavor. Resting the lasagna after baking helps maintain its layers.
