Ingredients

  • 3 cups whole milk
  • 1 pinch nutmeg

  • 23 cups sliced mushrooms
  • 2 cups chopped spinach
  • 15 ounces ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • Fresh basil and thyme for seasoning
  • Olive oil for sautéing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Melt the butter in a saucepan over medium heat and whisk in the flour to create a roux.
  3. Gradually add the milk, whisking continuously until thickened. Season with nutmeg, salt, and pepper.
  4. Sauté the mushrooms in olive oil until golden, then add spinach until wilted. Season with herbs.
  5. In a bowl, mix ricotta cheese, mozzarella, Parmesan, and an egg until smooth.
  6. Assemble the lasagna by layering béchamel, noodles, ricotta mixture, sautéed vegetables, and mozzarella in a baking dish.
  7. Cover with foil and bake for 25 minutes, then remove foil and bake for 15 more minutes until golden.
  8. Let it rest for 10 minutes before serving.
