Ingredients

Scale
  • 2 cans cannellini beans or Great Northern beans

  • 1 lemon (zest and juice)
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil or unsalted butter
  • 1 tablespoon fresh thyme or rosemary
  • 1 cup vegetable or chicken stock
  • Salt and black pepper, to taste
  • Optional: sautéed mushrooms, wilted spinach, crispy breadcrumbs

Instructions

  1. Zest and juice the lemon, grate the Parmesan, and mince the garlic.
  2. Heat a skillet over medium heat, then add olive oil or butter.
  3. Add garlic and a pinch of salt; sauté until fragrant and golden.
  4. Add beans and stock, simmer gently, mashing a few beans for creaminess.

Notes

Pair with crusty bread or as a side to roasted meats. For a vegan option, replace Parmesan with nutritional yeast.
