  • 1 cup fresh lump crab meat
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 4 cups chicken or vegetable broth
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons vegetable oil or butter
  • Salt and pepper to taste
  • 1 tablespoon lemon juice

Instructions

  1. Peel and dice the sweet potatoes into evenly sized cubes.
  2. In a large pot, heat the vegetable oil over medium heat. Add diced onions and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic and cook for an additional minute until fragrant.
  4. Add the diced sweet potatoes and broth. Bring to a gentle boil, then reduce to a simmer for 15-20 minutes until the sweet potatoes soften.
  5. Use an immersion blender to purée the soup until smooth.
  6. Return the soup to low heat and stir in the heavy cream, crab meat, and herbs. Season with salt and pepper, and add lemon juice.
  7. Warm through for about 5 minutes, allowing the flavors to mingle.
  8. Serve in bowls, garnishing with additional crab and fresh herbs.

Notes

For a lighter version, replace heavy cream with coconut milk. Ensure to use fresh crab for the best flavor.
