- 2 medium sweet potatoes, peeled and diced
- 1 cup fresh lump crab meat
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 4 cups chicken or vegetable broth
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons vegetable oil or butter
- Salt and pepper to taste
- 1 tablespoon lemon juice
Instructions
- Peel and dice the sweet potatoes into evenly sized cubes.
- In a large pot, heat the vegetable oil over medium heat. Add diced onions and sauté until translucent, about 5 minutes.
- Stir in minced garlic and cook for an additional minute until fragrant.
- Add the diced sweet potatoes and broth. Bring to a gentle boil, then reduce to a simmer for 15-20 minutes until the sweet potatoes soften.
- Use an immersion blender to purée the soup until smooth.
- Return the soup to low heat and stir in the heavy cream, crab meat, and herbs. Season with salt and pepper, and add lemon juice.
- Warm through for about 5 minutes, allowing the flavors to mingle.
- Serve in bowls, garnishing with additional crab and fresh herbs.
Notes
For a lighter version, replace heavy cream with coconut milk. Ensure to use fresh crab for the best flavor.
