Description

A comforting and quick meal that combines rotisserie chicken, broccoli, and pasta in a creamy sauce, perfect for busy families.


Ingredients

  • 1 rotisserie chicken, shredded
  • 2 cups fresh broccoli florets
  • 8 oz pasta (penne or fettuccine)
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 1/2 cup Parmesan cheese, grated
  • 2 tbsp olive oil
  • Salt, to taste
  • Pepper, to taste
  • Italian herbs, to taste

Instructions

  1. Cook pasta according to package instructions in salted water until al dente.
  2. Heat olive oil in a large skillet over medium heat and sauté the onion until translucent, about 3 minutes.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Add broccoli florets and sauté, or blanch them first for color.
  5. Pour in heavy cream and let simmer for 2-3 minutes.
  6. Add shredded rotisserie chicken and stir into the cream sauce.
  7. Drain pasta and add to the skillet, tossing to combine and coat with sauce.
  8. Stir in grated Parmesan until melted, then adjust seasoning as needed.
  9. Garnish with fresh herbs if desired and serve hot.

Notes

For variations, consider using frozen broccoli or spinach, or coconut milk for a dairy-free option.
