- 1 rotisserie chicken, shredded
- 2 cups fresh broccoli florets
- 8 oz pasta (penne or fettuccine)
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1 onion, diced
- 1/2 cup Parmesan cheese, grated
- 2 tbsp olive oil
- Salt, to taste
- Pepper, to taste
- Italian herbs, to taste
Instructions
- Cook pasta according to package instructions in salted water until al dente.
- Heat olive oil in a large skillet over medium heat and sauté the onion until translucent, about 3 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Add broccoli florets and sauté, or blanch them first for color.
- Pour in heavy cream and let simmer for 2-3 minutes.
- Add shredded rotisserie chicken and stir into the cream sauce.
- Drain pasta and add to the skillet, tossing to combine and coat with sauce.
- Stir in grated Parmesan until melted, then adjust seasoning as needed.
- Garnish with fresh herbs if desired and serve hot.

For variations, consider using frozen broccoli or spinach, or coconut milk for a dairy-free option.
