- 1 cup red lentils, rinsed
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 inch ginger, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 6 cups vegetable broth
- 1 tsp cumin
- ½ tsp turmeric
- ½ tsp paprika
- Juice of 1 lemon
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, garlic, and ginger; sauté until fragrant and softened, about 5 minutes.
- Stir in diced carrots and celery; cook for an additional 5 minutes.
- Add cumin, turmeric, paprika, and red lentils; stir well to coat lentils with spices.
- Gradually add vegetable broth, stirring to combine.
- Bring to a boil, then reduce heat and simmer for 20–25 minutes or until lentils are tender.
- For a creamy texture, use an immersion blender to purée, or mash some of the lentils with a fork for a chunkier texture.
- Stir in lemon juice and adjust seasoning with salt and pepper before serving.
- Serve hot, garnished with fresh herbs or a drizzle of olive oil.
Notes
For extra depth of flavor, consider roasting the vegetables before adding them to the pot. Ensure lentils are rinsed before cooking to remove any debris.
