Description

A comforting and nutritious creamy red lentil soup, perfect for chilly evenings and gatherings with friends.


Ingredients

  • 1 cup red lentils, rinsed
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 inch ginger, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 6 cups vegetable broth
  • 1 tsp cumin
  • ½ tsp turmeric
  • ½ tsp paprika
  • Juice of 1 lemon
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, and ginger; sauté until fragrant and softened, about 5 minutes.
  2. Stir in diced carrots and celery; cook for an additional 5 minutes.
  3. Add cumin, turmeric, paprika, and red lentils; stir well to coat lentils with spices.
  4. Gradually add vegetable broth, stirring to combine.
  5. Bring to a boil, then reduce heat and simmer for 20–25 minutes or until lentils are tender.
  6. For a creamy texture, use an immersion blender to purée, or mash some of the lentils with a fork for a chunkier texture.
  7. Stir in lemon juice and adjust seasoning with salt and pepper before serving.
  8. Serve hot, garnished with fresh herbs or a drizzle of olive oil.

Notes

For extra depth of flavor, consider roasting the vegetables before adding them to the pot. Ensure lentils are rinsed before cooking to remove any debris.
