Instructions
- Prepare Your Ingredients: Measure out your polenta, pumpkin puree, broth, and seasoning.
- Boil the Broth: In a heavy-bottomed pot, bring about 4 cups of vegetable or chicken broth to a boil.
- Whisk in the Polenta: Gradually whisk in 1 cup of polenta to the boiling broth, reducing the heat to low.
- Simmer Away: Allow the polenta to simmer, stirring occasionally, for about 30 minutes, until thickened.
- Stir in the Pumpkin and Butter: Fold in the pumpkin puree and butter until well combined.
- Add Cheese and Seasonings: Mix in parmesan cheese, salt, and herbs for flavor.
