Instructions

  2. Boil the Broth: In a heavy-bottomed pot, bring about 4 cups of vegetable or chicken broth to a boil.
  3. Whisk in the Polenta: Gradually whisk in 1 cup of polenta to the boiling broth, reducing the heat to low.
  4. Simmer Away: Allow the polenta to simmer, stirring occasionally, for about 30 minutes, until thickened.
  5. Stir in the Pumpkin and Butter: Fold in the pumpkin puree and butter until well combined.
