Ingredients

- 1 1/2 cups creamy natural peanut butter
- 1 cup heavy cream, chilled
- 3/4 cup confectioners’ sugar, sifted
- 1 teaspoon pure vanilla extract
- Pinch of fine sea salt
- Flaky sea salt (for finishing)
- Optional: 2 tablespoons melted dark chocolate or 1 teaspoon espresso powder
Instructions
- Chill a medium mixing bowl and beaters in the freezer for 10 minutes.
- Whip the heavy cream in the chilled bowl until soft peaks form; add half of the confectioners’ sugar and continue to whip until medium peaks appear.
- In a separate bowl, combine peanut butter, remaining confectioners’ sugar, vanilla, and a pinch of fine salt until smooth.
- Fold one-third of the whipped cream into the peanut butter mixture. Then fold in the remaining whipped cream in two batches until fully combined.
- Spoon the mousse into serving dishes and chill for at least 1 hour.
- Finish with a sprinkle of flaky sea salt and a drizzle of melted chocolate if desired.
Notes
For an ultra-silky result, warm the peanut butter briefly before combining. Avoid over-whipping the cream to maintain a smooth texture.
