Ingredients

  • 2 cups shredded rotisserie chicken
  • 1 cup pastina
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons fresh thyme, chopped
  • 2 teaspoons fresh parsley, chopped
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. In a large pot, heat a splash of olive oil over medium heat. Add diced onion and minced garlic, stirring until fragrant and translucent.
  2. Add the shredded or diced chicken to the pot and sauté until just heated through.
  3. Pour in the chicken broth and bring to a simmer.
  4. Stir in the pastina and cook according to package instructions until al dente.
  5. Lower the heat and stir in the heavy cream and Parmesan cheese until well combined.
  6. Season with salt, pepper, and fresh herbs to taste.
  7. Serve hot, garnished with extra Parmesan and cracked pepper.

Notes

For a lighter version, you can substitute half-and-half or milk for heavy cream. Be careful not to overcook the pastina.
