Ingredients

- 2 cups shredded rotisserie chicken
- 1 cup pastina
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1 onion, diced
- 3 cloves garlic, minced
- 2 teaspoons fresh thyme, chopped
- 2 teaspoons fresh parsley, chopped
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a large pot, heat a splash of olive oil over medium heat. Add diced onion and minced garlic, stirring until fragrant and translucent.
- Add the shredded or diced chicken to the pot and sauté until just heated through.
- Pour in the chicken broth and bring to a simmer.
- Stir in the pastina and cook according to package instructions until al dente.
- Lower the heat and stir in the heavy cream and Parmesan cheese until well combined.
- Season with salt, pepper, and fresh herbs to taste.
- Serve hot, garnished with extra Parmesan and cracked pepper.
Notes
For a lighter version, you can substitute half-and-half or milk for heavy cream. Be careful not to overcook the pastina.
