- 1 pound fresh morel mushrooms
- 2 tablespoons olive oil or unsalted butter
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1 cup heavy cream
- Fresh thyme
- Salt and pepper to taste
- Fresh parsley for garnish
- Optional: 1/2 cup white wine or sherry
Instructions
- Clean the morels gently under running water and pat them dry. Slice large morels in half.
- In a large skillet, heat the olive oil or butter over medium heat. Add the onion and cook until translucent, about 5 minutes. Stir in the garlic and cook for another minute.
- Add the morels, seasoning with salt and pepper, and sauté for 8-10 minutes until tender and golden.
- If using wine, pour it in now and deglaze the pan, scraping up any browned bits. Let it reduce for about 3 minutes.
- Add the vegetable broth and bring to a simmer, letting it thicken for 5-7 minutes.
- Reduce heat to low and stir in the cream until well combined. Add more broth if the sauce is too thick.
- Add fresh thyme and adjust seasoning with more salt and pepper. Heat through for another 5 minutes.
- Garnish with chopped parsley and serve hot over noodles or rice.
Notes
Ensure not to overcrowd the pan when sautéing to achieve better browning. Adjust creaminess based on preference.
