Description

A comforting and creamy stroganoff featuring earthy morel mushrooms, perfect for family gatherings.


Ingredients

  • 1 pound fresh morel mushrooms
  • 2 tablespoons olive oil or unsalted butter
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • Fresh thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Optional: 1/2 cup white wine or sherry

Instructions

  1. Clean the morels gently under running water and pat them dry. Slice large morels in half.
  2. In a large skillet, heat the olive oil or butter over medium heat. Add the onion and cook until translucent, about 5 minutes. Stir in the garlic and cook for another minute.
  3. Add the morels, seasoning with salt and pepper, and sauté for 8-10 minutes until tender and golden.
  4. If using wine, pour it in now and deglaze the pan, scraping up any browned bits. Let it reduce for about 3 minutes.
  5. Add the vegetable broth and bring to a simmer, letting it thicken for 5-7 minutes.
  6. Reduce heat to low and stir in the cream until well combined. Add more broth if the sauce is too thick.
  7. Add fresh thyme and adjust seasoning with more salt and pepper. Heat through for another 5 minutes.
  8. Garnish with chopped parsley and serve hot over noodles or rice.

Notes

Ensure not to overcrowd the pan when sautéing to achieve better browning. Adjust creaminess based on preference.
