- 12 oz Rigatoni Pasta
- 1 lb Italian Sausage (mild or spicy)
- 4 cups Kale, chopped
- 1 can (28 oz) Tomato Sauce
- 1 cup Heavy Cream
- 4 cloves Garlic, minced
- 1 large Onion, diced
- 1/2 cup Parmesan Cheese, freshly grated
- 2 tbsp Olive Oil
- 1/2 tsp Crushed Red Pepper Flakes (optional)
Instructions
- Cook the rigatoni according to package directions in a large pot of salted water until al dente. Reserve some pasta water before draining.
- In a large skillet over medium heat, add olive oil, then add the Italian sausage, breaking it apart as it cooks until browned and cooked through, about 5-7 minutes.
- Stir in minced garlic and diced onion, cooking until softened and fragrant, about 2-3 minutes.
- Toss in the kale and cook until wilted and tender, about 2-4 minutes.
- Pour in the tomato sauce, stir to combine, and let simmer for about 5 minutes. Then add the heavy cream and mix well.
- Combine the cooked rigatoni with the sauce, mixing until well coated. Add Parmesan cheese and season with salt, pepper, and crushed red pepper flakes to taste.
- Plate the rigatoni and garnish with extra Parmesan and fresh herbs if desired.
Notes
For a lighter option, substitute heavy cream with half-and-half. Serve hot with a side of garlic bread and salad.
