Ingredients

  • 12 oz Rigatoni Pasta
  • 1 lb Italian Sausage (mild or spicy)
  • 4 cups Kale, chopped
  • 1 can (28 oz) Tomato Sauce
  • 1 cup Heavy Cream
  • 4 cloves Garlic, minced
  • 1 large Onion, diced
  • 1/2 cup Parmesan Cheese, freshly grated
  • 2 tbsp Olive Oil
  • 1/2 tsp Crushed Red Pepper Flakes (optional)

Instructions

  1. Cook the rigatoni according to package directions in a large pot of salted water until al dente. Reserve some pasta water before draining.
  2. In a large skillet over medium heat, add olive oil, then add the Italian sausage, breaking it apart as it cooks until browned and cooked through, about 5-7 minutes.
  3. Stir in minced garlic and diced onion, cooking until softened and fragrant, about 2-3 minutes.
  4. Toss in the kale and cook until wilted and tender, about 2-4 minutes.
  5. Pour in the tomato sauce, stir to combine, and let simmer for about 5 minutes. Then add the heavy cream and mix well.
  6. Combine the cooked rigatoni with the sauce, mixing until well coated. Add Parmesan cheese and season with salt, pepper, and crushed red pepper flakes to taste.
  7. Plate the rigatoni and garnish with extra Parmesan and fresh herbs if desired.

Notes

For a lighter option, substitute heavy cream with half-and-half. Serve hot with a side of garlic bread and salad.
