Ingredients

  • 2 cups mixed mushrooms (shiitake, cremini, portobello), sliced
  • 2 tablespoons butter or olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons sweet Hungarian paprika
  • 2 tablespoons all-purpose flour
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream (or coconut cream for dairy-free)
  • Fresh dill or herbs of choice, chopped
  • Salt and pepper to taste
  • 1 tablespoon lemon juice or vinegar (optional)

Instructions

  1. In a large pot over medium heat, melt the butter or heat the olive oil.
  2. Add the chopped onion and garlic, sauté until translucent.
  3. Add sliced mushrooms and cook until they release moisture and become golden brown.
  4. Stir in paprika and flour to coat the mushrooms, cooking for another minute.
  5. Gradually add broth while stirring to avoid lumps, bringing the mixture to a gentle simmer.
  6. Simmer for about 15 minutes, then blend the soup to desired smoothness using an immersion blender.
  7. Stir in the heavy cream and adjust seasoning with salt, pepper, and lemon juice or vinegar.
  8. Before serving, mix in freshly chopped dill or your herb of choice.
  9. Ladle the soup into bowls and serve warm, possibly with crusty bread or croutons.

Notes

For a chunkier soup, blend only half. Experiment with different herbs and mushrooms as per your taste.
