- 2 tablespoons butter or olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons sweet Hungarian paprika
- 2 tablespoons all-purpose flour
- 4 cups vegetable or chicken broth
- 1 cup heavy cream (or coconut cream for dairy-free)
- Fresh dill or herbs of choice, chopped
- Salt and pepper to taste
- 1 tablespoon lemon juice or vinegar (optional)
Instructions
- In a large pot over medium heat, melt the butter or heat the olive oil.
- Add the chopped onion and garlic, sauté until translucent.
- Add sliced mushrooms and cook until they release moisture and become golden brown.
- Stir in paprika and flour to coat the mushrooms, cooking for another minute.
- Gradually add broth while stirring to avoid lumps, bringing the mixture to a gentle simmer.
- Simmer for about 15 minutes, then blend the soup to desired smoothness using an immersion blender.
- Stir in the heavy cream and adjust seasoning with salt, pepper, and lemon juice or vinegar.
- Before serving, mix in freshly chopped dill or your herb of choice.
- Ladle the soup into bowls and serve warm, possibly with crusty bread or croutons.
Notes
For a chunkier soup, blend only half. Experiment with different herbs and mushrooms as per your taste.
