- Salmon fillets
- Fettuccine or linguine pasta
- 3 cloves of garlic, minced
- 1 cup heavy cream
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 cup mushrooms, sliced (cremini or shiitake)
- Fresh dill or parsley for garnish
- Salt and pepper to taste
Instructions
- Cook the Pasta: In a large pot of salted boiling water, cook pasta until al dente, following package instructions. Reserve a cup of pasta water before draining.
- Sauté the Garlic and Mushrooms: In a skillet over medium heat, melt butter and olive oil. Sauté garlic for about a minute until fragrant, then add sliced mushrooms and cook until softened.
- Prepare the Salmon: Add raw salmon to the skillet, seasoning with salt and pepper. Cook for around 4-5 minutes on each side until cooked through, then flake it apart with a fork.
- Make the Sauce: Pour in heavy cream, allowing it to simmer and thicken. Mix in drained pasta and add reserved water as needed to reach the desired consistency.
- Finish with Herbs: Stir in fresh dill or parsley and additional seasoning if required.
- Serve: Scoop pasta onto plates, topping with extra herbs for garnish.
Notes
Ensure not to overcook the salmon and adjust the seasoning to your taste.
