Creamy Garlic Salmon Pasta

Description

A comforting and rich dish featuring tender salmon in a creamy garlic sauce over pasta.


Ingredients

  • Fresh salmon fillets
  • Spaghetti or fettuccine
  • Heavy cream
  • Garlic (fresh cloves or garlic powder)
  • Parmesan cheese
  • Fresh herbs (parsley or dill)
  • Mushrooms (shiitake or cremini)
  • Salt and pepper
  • Butter
  • Lemon juice (optional)

Instructions

  1. Cook the pasta in a large pot of salted water until al dente. Reserve about a cup of pasta water, then drain and set aside.
  2. In a large skillet over medium heat, melt two tablespoons of butter. Add minced garlic and sliced mushrooms, sautéing until golden and fragrant for about 5 to 7 minutes.
  3. Season salmon fillets with salt and pepper. Push mushrooms to the side and place the salmon in the center. Cook for about 4 minutes on each side until cooked through and flaky. Remove from skillet and set aside.
  4. In the same skillet, pour in the heavy cream and parmesan cheese, stirring until the cheese melts into a smooth sauce. Add reserved pasta water if the sauce is too thick.
  5. Return the pasta to the skillet along with the salmon, breaking it into chunks as you mix. Toss everything together, adding herbs and adjusting seasoning with salt, pepper, and lemon juice.
  6. Plate the pasta and garnish with extra herbs and freshly grated Parmesan.
