Ingredients

- 8 oz fettuccine pasta
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley or basil, for garnishing
Instructions
- Cook the pasta in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water before draining.
- In a large skillet, heat olive oil and butter over medium heat. Season chicken with salt and pepper, cook until browned and cooked through, about 6-7 minutes per side, then let it rest and slice.
- In the same skillet, add more butter and minced garlic, cooking until fragrant. Pour in heavy cream and stir in Parmesan cheese until smooth. Add reserved pasta water as needed for consistency.
- Add the drained pasta to the sauce, toss to coat, and top with sliced chicken. Garnish with fresh herbs and additional Parmesan if desired.
Notes
Adjust seasoning to taste. For added flavor, deglaze the skillet with a splash of white wine before adding cream.
