- 8 oz fettuccine or ravioli
- 1 medium butternut squash
- 1 cup heavy cream
- 2 tbsp olive oil or butter
- 3 cloves garlic, minced
- 1 tbsp fresh sage, chopped
- 1 tbsp fresh thyme, chopped
- 1/2 cup freshly grated parmesan cheese
- Salt and pepper to taste
- Pinch of nutmeg (optional)
Instructions
- Preheat your oven to 400°F (200°C). Cut the butternut squash in half, scoop out the seeds, and drizzle with olive oil. Season with salt and pepper. Roast in the oven for about 30-40 minutes, or until tender and caramelized.
- While the squash roasts, cook your pasta according to the package instructions. Drain and set aside, reserving a cup of the pasta water for later.
- In a skillet, heat olive oil or butter over medium heat. Add minced garlic and let it sauté until fragrant. Toss in the fresh sage and thyme, cooking for another minute to release their aromas.
- Once the squash is tender, scoop the flesh into the skillet with the sautéed herbs. Add the cream and stir well, letting it bubble gently. Blend the mixture for the smoothest texture or mash with a fork for a chunky sauce.
- Add the cooked pasta into the sauce, mixing thoroughly. If the sauce seems too thick, gradually add it with the reserved pasta water until your desired consistency is reached. Finish with grated parmesan and a pinch of nutmeg.
- Plate your creamy pasta and garnish with extra sage leaves, a sprinkle of parmesan, and a drizzle of olive oil.
Notes
Taste as you go and adjust seasoning. A squeeze of lemon juice before serving can add freshness.
