Ingredients

  • 2 cups fresh broccoli florets (or frozen if needed)
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup heavy cream
  • 4 cups chicken or vegetable broth
  • 2 medium-sized potatoes, peeled and cubed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Prepare your ingredients by chopping the broccoli, dicing the onion, mincing the garlic, and cubing the potatoes.
  2. In a large pot, heat a drizzle of olive oil over medium heat. Sauté the onion until translucent, then add the garlic and sauté until fragrant.
  3. Add the cubed potatoes and broccoli florets to the pot, then pour in the broth, ensuring the vegetables are submerged. Bring to a gentle boil and cook until the potatoes are tender (about 15-20 minutes).
  4. Once soft, use an immersion blender to puree the soup until smooth, or blend in batches using a traditional blender.
  5. Stir in the heavy cream and shredded cheddar cheese, allowing it to melt while stirring. Season with salt and pepper to taste. Serve warm, garnished with additional cheddar or crusty bread on the side.

Notes

For a different twist, try using Gruyère cheese or add a dollop of sour cream for richness. Can be made dairy-free by substituting cheese with nutritional yeast.
