- 1 yellow onion, chopped finely
- 2 cloves fresh garlic, minced
- 4 cups broccoli florets, washed and trimmed
- 1/4 cup all-purpose flour
- 4 cups low-sodium chicken or vegetable broth
- 2 cups whole milk or heavy cream
- 2 cups sharp cheddar cheese, grated
- 1 tablespoon Dijon mustard
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg (optional)
- Fresh thyme or parsley for garnish
Instructions
- Prepare ingredients by grating the cheddar and chopping the broccoli.
- In a heavy-bottomed pot, melt butter over medium heat.
- Add chopped onion and sauté until soft and translucent, then stir in garlic for the last 30 seconds.
- Sprinkle flour over onions, cooking for about one minute while whisking constantly.
- Slowly whisk in broth and milk, continuing until thickened.
- Add broccoli florets and simmer for 8–10 minutes until tender.
- Blend half the soup for a smoother texture, then return to the pot.
- Reduce heat, add cheddar gradually, stirring to melt evenly.
- Season and garnish with thyme before serving.
Notes
Use freshly grated cheese for the best melt. If the soup thickens too much, add a splash of milk to loosen it.
