Ingredients
- White beans (cannellini or great northern)
- Italian sausage (sweet or spicy)
- Onions, chopped
- Carrots, diced
- Garlic, minced
- Low-sodium chicken or vegetable broth
- Heavy cream or coconut milk
- Fresh thyme
- Fresh parsley
- Salt and pepper to taste
Instructions
- Prepare the Beans: If using dried beans, soak them overnight in water, then boil until tender. Canned beans can be used for quicker preparation.
- Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Add chopped onions, diced carrots, and minced garlic. Sauté until softened, about 5 minutes.
- Brown the Sausage: Push the veggies aside and add sausage. Cook until browned, breaking it into chunks.
- Combine and Simmer: Stir in beans, pour in the broth, and season. Bring to a boil, then lower heat and simmer for 30 minutes.
- Blend for Creaminess: Optionally, blend a portion of the soup until smooth and return to the pot.
- Add Cream and Season: Stir in cream and adjust seasoning as needed.
- Serve and Enjoy: Ladle into bowls, garnish with herbs, and add a drizzle of olive oil.
Notes
For a lighter version, use chicken sausage. This soup pairs beautifully with crusty bread.
