  • Heavy cream or coconut milk
  • Fresh thyme
  • Fresh parsley
  • Salt and pepper to taste

Instructions

  1. Prepare the Beans: If using dried beans, soak them overnight in water, then boil until tender. Canned beans can be used for quicker preparation.
  2. Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Add chopped onions, diced carrots, and minced garlic. Sauté until softened, about 5 minutes.
  3. Brown the Sausage: Push the veggies aside and add sausage. Cook until browned, breaking it into chunks.
  4. Combine and Simmer: Stir in beans, pour in the broth, and season. Bring to a boil, then lower heat and simmer for 30 minutes.
  5. Blend for Creaminess: Optionally, blend a portion of the soup until smooth and return to the pot.
