  • 1/2 cup sour cream
  • 1 cup crumbled queso fresco or feta cheese
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 tsp cumin

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the corn—if using fresh corn, grill it lightly first; if using frozen, ensure it’s thawed.
  3. Mix the cream cheese, mayonnaise, and sour cream until smooth.
  4. Stir in the corn, cheese, lime juice, and spices until well combined.
  5. Transfer to a baking dish and spread evenly; top with additional cheese if desired.
  6. Bake for 20-25 minutes, or until bubbling and golden on top.
  7. Garnish with cilantro or green onions before serving.
