Ingredients

- 2 cups sweet corn (fresh or frozen)
- 8 oz cream cheese, softened
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 cup crumbled queso fresco or feta cheese
- 1/4 cup fresh cilantro, chopped
- 2 tbsp lime juice
- 1 tsp chili powder
- 1 tsp garlic powder
- 1/2 tsp cumin
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the corn—if using fresh corn, grill it lightly first; if using frozen, ensure it’s thawed.
- Mix the cream cheese, mayonnaise, and sour cream until smooth.
- Stir in the corn, cheese, lime juice, and spices until well combined.
- Transfer to a baking dish and spread evenly; top with additional cheese if desired.
- Bake for 20-25 minutes, or until bubbling and golden on top.
- Garnish with cilantro or green onions before serving.
Notes
Allow the dip to cool for a few minutes before serving to enhance flavor melding.
