- 1 tablespoon olive oil
- Fresh herbs (thyme, sage, or rosemary), to taste

- Optional: sautéed spinach or mushrooms
- Toasted pine nuts, for garnish
Instructions
- Preheat your air fryer to 375°F.
- Toss gnocchi with olive oil, salt, and pepper in a mixing bowl.
- Sauté minced garlic in a skillet over medium heat until fragrant.
- Add pumpkin puree and heavy cream to the skillet, mixing well with herbs.
- Fold in the sautéed gnocchi, adding any optional vegetables.
- Transfer the mixture to a baking dish suitable for the air fryer and sprinkle with mozzarella and parmesan.
- Cook in the air fryer for 10-12 minutes, until cheese is melted and golden brown.
- Allow to cool slightly, then garnish and serve.
Notes
Avoid overcrowding the baking dish in the air fryer for even cooking. Use fresh herbs for the best flavor.
