  • 1 cup pumpkin puree (canned or homemade)
  • 1/2 cup heavy cream (or coconut milk for dairy-free)
  • 2 cloves garlic, minced
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 1 tablespoon olive oil
  • Fresh herbs (thyme, sage, or rosemary), to taste
  • Salt and pepper, to taste
  • Optional: sautéed spinach or mushrooms
  • Toasted pine nuts, for garnish

Instructions

  1. Preheat your air fryer to 375°F.
  2. Toss gnocchi with olive oil, salt, and pepper in a mixing bowl.
  3. Sauté minced garlic in a skillet over medium heat until fragrant.
  4. Add pumpkin puree and heavy cream to the skillet, mixing well with herbs.
  5. Fold in the sautéed gnocchi, adding any optional vegetables.
  6. Transfer the mixture to a baking dish suitable for the air fryer and sprinkle with mozzarella and parmesan.
  7. Cook in the air fryer for 10-12 minutes, until cheese is melted and golden brown.
  8. Allow to cool slightly, then garnish and serve.

Notes

Avoid overcrowding the baking dish in the air fryer for even cooking. Use fresh herbs for the best flavor.
