  • ¼ cup Orange Juice
  • 1 ½ cups Powdered Sugar (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C) and line a mini cupcake pan with paper liners.
  2. Cream together the butter and granulated sugar until fluffy, about 2-3 minutes.
  3. Add eggs one at a time, mixing until combined, then stir in vanilla and orange zest.
  4. Gradually alternate adding flour and buttermilk to the mixture, starting and ending with flour. Mix until just combined.
  5. Fill cupcake liners two-thirds full and bake for 10-12 minutes, or until a toothpick comes out clean.
  6. Cool in the pan for 5 minutes before transferring to a wire rack.
  7. For frosting, mix butter and powdered sugar, adding orange juice to reach desired consistency. Frost cooled cupcakes and garnish with sprinkles.
