Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1 tsp vanilla extract
  • 1/2 cup jam (any flavor)

Instructions

  1. In a mixing bowl, combine the softened cream cheese and butter. Cream them together until smooth and fluffy. Gradually add sugar and mix until well blended, followed by the vanilla extract.
  2. Gently mix in the flour until just combined. Be careful not to overmix.
  3. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  4. On a floured surface, roll the dough into a rectangle about 1/4-inch thick.
  5. Evenly spread a layer of jam over the dough, leaving a small border around the edges.
  6. Roll the dough tightly into a log and slice it into 1/2-inch thick pinwheels.
  7. Place the pinwheels on a parchment-lined baking sheet and bake in a preheated oven at 350°F (175°C) for 10-12 minutes, or until lightly golden at the edges.
  8. Let them cool on a wire rack before serving.

Notes

For extra flavor, consider adding cinnamon to the dough. These cookies can also be drizzled with melted chocolate for a special touch.
