- 4 boneless skinless chicken breasts
- 8 oz Brie cheese, cubed
- 2 cups fresh spinach
- 1 cup cranberries (fresh or dried)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh thyme or Italian seasoning
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add onion and garlic, cooking until translucent. Stir in spinach; season with salt and cook until wilted (about 3 minutes).
- In a bowl, combine sautéed spinach, cranberries, and cubed Brie. Season with pepper and herbs.
- Create a pocket in each chicken breast without slicing all the way through.
- Fill each pocket generously with the cranberry-spinach mixture. Secure openings with toothpicks.
- In the skillet, add more oil and sear each stuffed breast for about 4-5 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake for 20-25 minutes until internal temperature reaches 165°F (75°C).
- Allow chicken to rest for 5 minutes before slicing. Serve warm.
