Cranberry & Spinach Stuffed Chicken with Brie

Description

A delightful dish featuring tender chicken breasts stuffed with a savory filling of spinach, cranberries, and creamy Brie.


Ingredients

  • 4 boneless skinless chicken breasts
  • 8 oz Brie cheese, cubed
  • 2 cups fresh spinach
  • 1 cup cranberries (fresh or dried)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh thyme or Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add onion and garlic, cooking until translucent. Stir in spinach; season with salt and cook until wilted (about 3 minutes).
  3. In a bowl, combine sautéed spinach, cranberries, and cubed Brie. Season with pepper and herbs.
  4. Create a pocket in each chicken breast without slicing all the way through.
  5. Fill each pocket generously with the cranberry-spinach mixture. Secure openings with toothpicks.
  6. In the skillet, add more oil and sear each stuffed breast for about 4-5 minutes on each side until golden brown.
  7. Transfer the chicken to a baking dish and bake for 20-25 minutes until internal temperature reaches 165°F (75°C).
  8. Allow chicken to rest for 5 minutes before slicing. Serve warm.

Notes

Let your chicken rest before slicing for moist, flavorful meat. Pair with roasted vegetables or a leafy salad.
