Ingredients

- 3–4 lb chuck roast or brisket
- 2 cups fresh or frozen cranberries
- 1 cup balsamic vinegar
- 4 cloves garlic, minced
- 2 onions, sliced
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- Salt and pepper to taste
- Olive oil for browning
Instructions
- Preheat your oven to 325°F (163°C).
- Season the beef roast with salt and pepper, then brown it in a hot skillet with olive oil until a crust forms.
- Transfer the roast to a baking dish and sauté sliced onions and minced garlic in the skillet until softened.
- Deglaze the pan with balsamic vinegar, scraping up any brown bits, then stir in cranberries and herbs.
- Pour the mixture over the roast and cover tightly with foil.
- Roast for 1.5 to 2 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare.
- Allow to rest for 10-15 minutes before slicing and serving with the cranberry-balsamic sauce.
Notes
For variations, try using cherries or figs in place of cranberries, or substitute balsamic vinegar with red wine.
