Description

A delightful roast featuring tender beef glazed with a tangy cranberry-balsamic sauce, perfect for family gatherings and special occasions.


Ingredients

  • 34 lb chuck roast or brisket
  • 2 cups fresh or frozen cranberries
  • 1 cup balsamic vinegar
  • 4 cloves garlic, minced
  • 2 onions, sliced
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • Salt and pepper to taste
  • Olive oil for browning

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Season the beef roast with salt and pepper, then brown it in a hot skillet with olive oil until a crust forms.
  3. Transfer the roast to a baking dish and sauté sliced onions and minced garlic in the skillet until softened.
  4. Deglaze the pan with balsamic vinegar, scraping up any brown bits, then stir in cranberries and herbs.
  5. Pour the mixture over the roast and cover tightly with foil.
  6. Roast for 1.5 to 2 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare.
  7. Allow to rest for 10-15 minutes before slicing and serving with the cranberry-balsamic sauce.

Notes

For variations, try using cherries or figs in place of cranberries, or substitute balsamic vinegar with red wine.
