Tender turkey meatballs in a rich pumpkin sage sauce, perfect for family gatherings.
Ingredients

- 1 lb ground turkey
- 1 cup pumpkin puree
- 1/2 cup breadcrumbs (panko or oatmeal)
- 2 cloves garlic, minced
- 1/2 onion, chopped
- 1 egg, beaten
- 1/4 cup fresh sage, chopped
- Salt and pepper to taste
- Olive oil for sautéing
- 1/2 cup cream (optional)
- Grated parmesan cheese for serving (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, combine ground turkey, pumpkin puree, breadcrumbs, minced garlic, chopped onion, beaten egg, and half of the chopped sage. Season with salt and pepper.
- Mix gently but thoroughly, being careful not to overwork the meat.
- Roll the mixture into meatballs, around the size of a golf ball, and place them on the prepared baking sheet.
- Bake for 20-25 minutes until golden brown and cooked through.
- Meanwhile, in a large saucepan, sauté the remaining sage in olive oil until fragrant. Add cream (if using) and pumpkin, stirring well.
- Allow the sauce to simmer for about 10 minutes to blend the flavors.
- Gently add the baked meatballs to the sauce, coating them well. Let them simmer for a few minutes to soak up the flavor.
- Serve hot, garnished with fresh sage leaves or grated parmesan cheese if desired.
Notes
For richer flavor, consider adding a splash of nutmeg. Freeze leftovers for up to three months.
