Description

Tender turkey meatballs in a rich pumpkin sage sauce, perfect for family gatherings.


Ingredients

  • 1 lb ground turkey
  • 1 cup pumpkin puree
  • 1/2 cup breadcrumbs (panko or oatmeal)
  • 2 cloves garlic, minced
  • 1/2 onion, chopped
  • 1 egg, beaten
  • 1/4 cup fresh sage, chopped
  • Salt and pepper to taste
  • Olive oil for sautéing
  • 1/2 cup cream (optional)
  • Grated parmesan cheese for serving (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, combine ground turkey, pumpkin puree, breadcrumbs, minced garlic, chopped onion, beaten egg, and half of the chopped sage. Season with salt and pepper.
  3. Mix gently but thoroughly, being careful not to overwork the meat.
  4. Roll the mixture into meatballs, around the size of a golf ball, and place them on the prepared baking sheet.
  5. Bake for 20-25 minutes until golden brown and cooked through.
  6. Meanwhile, in a large saucepan, sauté the remaining sage in olive oil until fragrant. Add cream (if using) and pumpkin, stirring well.
  7. Allow the sauce to simmer for about 10 minutes to blend the flavors.
  8. Gently add the baked meatballs to the sauce, coating them well. Let them simmer for a few minutes to soak up the flavor.
  9. Serve hot, garnished with fresh sage leaves or grated parmesan cheese if desired.

Notes

For richer flavor, consider adding a splash of nutmeg. Freeze leftovers for up to three months.
