- 8 oz fresh mushrooms (cremini and shiitake)
- 2 cloves garlic, minced
- 1 onion, finely chopped
- 1 cup heavy cream (or a dairy-free alternative)
- 1/2 cup grated Parmesan cheese
- 2 tbsp butter
- Fresh herbs (thyme and parsley, or your favorite)
- Salt and pepper to taste
Instructions
- In a large skillet, melt the butter over medium heat and sauté the chopped onions until translucent.
- Add the mushrooms and garlic, stirring frequently until they are golden and fragrant.
- While the mushrooms cook, bring a separate pot of salted water to a boil and cook the pastina according to package instructions.
- Once the pastina is al dente, drain it, reserving a cup of the pasta water, then add it directly to the skillet with the mushrooms.
- Pour in the heavy cream, stirring to combine and adjust the consistency with reserved pasta water as needed.
- Stir in grated Parmesan and season with salt, pepper, and fresh herbs.
- Serve immediately, garnished with more cheese and herbs.

For dairy-free options, use coconut cream or nut-based alternatives. Ensure mushrooms are dry before cooking for proper caramelization.
