Description

A colorful and nutritious dish featuring black beans, corn, tomatoes, and fresh herbs, perfect for serving as a dip or side dish.


Ingredients

  • 1 can black beans, rinsed and drained
  • 1 cup sweet corn (fresh, frozen, or canned)
  • 2 cups diced tomatoes
  • 1 medium red onion, diced
  • 1 bell pepper, diced (any color)
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice (freshly squeezed)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse and drain the black beans under cold water.
  2. Dice the tomatoes, red onion, and bell peppers into uniform pieces.
  3. In a large mixing bowl, combine black beans, sweet corn, diced tomatoes, chopped bell peppers, and red onion. Toss to mix.
  4. Drizzle olive oil and lime juice over the mixture. Season with salt and pepper. Gently fold in the chopped cilantro.
  5. Let the Cowboy Caviar marinate in the refrigerator for at least 30 minutes.
  6. Stir well before serving with tortilla chips or as a side dish.

Notes

For best flavor, prepare a day in advance and stir in cilantro right before serving.
