- 1 can black beans, rinsed and drained
- 1 cup sweet corn (fresh, frozen, or canned)
- 2 cups diced tomatoes
- 1 medium red onion, diced
- 1 bell pepper, diced (any color)
- 1/4 cup fresh cilantro, chopped
- 1/4 cup lime juice (freshly squeezed)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Rinse and drain the black beans under cold water.
- Dice the tomatoes, red onion, and bell peppers into uniform pieces.
- In a large mixing bowl, combine black beans, sweet corn, diced tomatoes, chopped bell peppers, and red onion. Toss to mix.
- Drizzle olive oil and lime juice over the mixture. Season with salt and pepper. Gently fold in the chopped cilantro.
- Let the Cowboy Caviar marinate in the refrigerator for at least 30 minutes.
- Stir well before serving with tortilla chips or as a side dish.
