Instructions
- In a large bowl, whisk the eggs until frothy; then stir in the cottage cheese, melted butter, and vanilla if using.
- In a separate bowl, sift together the flour, baking powder, sugar, and salt.
- Fold the dry mix into the wet ingredients gently; do not overmix.
- Heat a heavy skillet over medium and add a small knob of butter.
- Scoop tablespoons of batter onto the skillet, space them well.
- Cook until the bottoms are golden and the tops show tiny bubbles, about 2–3 minutes. Flip and cook another 1–2 minutes until golden.
- Transfer cooked pancakes to a warm plate and repeat with remaining batter.
