Ingredients

  • 1 lb ground beef or turkey
  • 1 cup cornmeal
  • 1 cup breadcrumbs
  • 2 large eggs, beaten
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Barbecue sauce or ketchup (optional, for glazing)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil and sauté onions and garlic until tender.
  3. In a large bowl, combine ground meat, sautéed mixture, cornmeal, breadcrumbs, beaten eggs, salt, and pepper.
  4. Mix until just combined, avoiding overworking the mixture.
  5. Shape into a loaf and place on a lined baking sheet, brushing with barbecue sauce if desired.
  6. Bake for 45-60 minutes until internal temperature reaches 160°F (71°C). Let rest before slicing.
