Description

A delicious rendition of the classic Olive Garden Shrimp Scampi featuring tender shrimp, garlic butter sauce, and perfectly cooked pasta.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 8 oz linguine or spaghetti
  • 4 cloves garlic, minced
  • 4 tbsp unsalted butter
  • 1/2 cup dry white wine (or chicken broth)
  • 1 lemon, juiced
  • 2 tbsp fresh parsley, chopped
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Cook the pasta: Boil salted water, add pasta, and cook until al dente. Reserve 1 cup pasta water and drain.
  2. Sauté the garlic: In a large skillet, melt butter over medium heat. Add garlic and red pepper flakes, sauté for 30 seconds until fragrant.
  3. Cook the shrimp: Add shrimp to the skillet and cook for 2-3 minutes on each side until pink and opaque.
  4. Add the wine: Pour in white wine and let it simmer for a couple of minutes to reduce slightly.
  5. Combine the pasta: Add cooked pasta, reserved pasta water, and lemon juice. Toss to combine.
  6. Season to taste: Adjust seasoning with salt and pepper. Finish with parsley and grated Parmesan.
  7. Serve immediately: Enjoy while piping hot!
