- 2 bay leaves
- 1 tsp dried thyme
- 1 tsp cayenne pepper
- 1 tsp black pepper
- 2 cloves garlic, minced
- Chopped green onions, for garnish
- Chopped parsley, for garnish
- Cooked white rice, for serving
Instructions
- Make the Roux: In a heavy pot, heat oil over medium heat. Gradually stir in flour, stirring constantly until the roux turns a deep brown color—this can take 20-30 minutes.
- Sauté the Vegetables: Add chopped onions, celery, and bell peppers to the roux and cook until softened.
- Incorporate the Sausage: Add sliced sausage to the roux and vegetables, allowing it to brown slightly.
- Spice it Up: Stir in minced garlic, Cajun seasoning, bay leaves, thyme, and cayenne, and let it cook for a minute.
- Add Liquid: Slowly pour in stock while stirring to avoid lumps, bringing it to a gentle simmer.
- Simmer: Cook for about 30 minutes, stirring occasionally, until thickened to your liking.
- Add the Shrimp: Stir in shrimp a few minutes before serving and cook until done, about 5 minutes.
- Finish with Freshness: Remove from heat, discard bay leaves, and add chopped green onions and parsley.
