  • 34 medium fresh apples (Granny Smith or Honeycrisp)
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon (or nutmeg)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a round cake pan.
  2. Peel, core, and chop the apples into small chunks. Toss with a sprinkle of cinnamon and set aside.
  3. In a large mixing bowl, cream the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Sift in the flour and baking powder, stirring gently until just combined.
  6. Fold in the chopped apples until evenly distributed.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 40-50 minutes, or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack. Dust with powdered sugar if desired before serving.

Notes

For a more caramelized top, sprinkle brown sugar before baking. Store leftovers in an airtight container at room temperature for up to three days.
