Description

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 cups powdered sugar
  • 2 large eggs

  • ¼ cup fresh lime juice

  • 1 teaspoon baking powder
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy (3-5 minutes). Add in the egg, vanilla extract, lime juice, and lime zest while continuing to beat the mixture.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture until just combined.
  4. Spoon the dough onto your prepared baking sheet, spacing them about 2 inches apart.
  5. Bake for 10-12 minutes until the edges are lightly golden. Allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack.
  6. Beat together powdered sugar, softened butter, fresh lime juice, and zest for the frosting until smooth. Adjust consistency as needed.
  7. Once the cookies are cool, spread frosting on each cookie and decorate with toppings.
  8. Store in an airtight container for up to three days.
