Description

A comforting yet sophisticated dish featuring turmeric, garlic, and ginger, perfect for family dinners or small gatherings.


Ingredients

  • 2 pounds bone-in, skin-on chicken thighs
  • Salt and pepper to taste
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 thumb-sized piece of ginger, grated
  • 8 ounces mushrooms (cremini or shiitake), sliced
  • 2 tablespoons butter or ghee
  • 1 lemon, juiced
  • 1 teaspoon ground turmeric
  • 1 cup chicken stock

Instructions

  1. Pat chicken dry and season with salt, pepper, and a light dusting of turmeric.
  2. Heat a skillet over medium-high heat, add butter or ghee until shimmering.
  3. Place the chicken skin-side down and sear for 6–8 minutes, then flip and brown briefly on the other side; set aside.
  4. Add onion to the skillet and sauté until translucent, then add garlic and ginger, stirring for 1 minute.
  5. Add mushrooms and sauté until they release moisture, caramelizing for 5–7 minutes; season with salt and pepper.
  6. Sprinkle in remaining turmeric, pour in chicken stock, and scrape the fond from the pan.
  7. Return chicken to skillet, skin-side up, reduce heat to medium-low, cover, and simmer for 15–20 minutes or until chicken reaches 165°F.
  8. Finish with lemon juice and a knob of butter for shine, adjusting seasoning as needed.

Notes

For extra flavor, consider marinating the chicken in yogurt, turmeric, and salt for 30–60 minutes before cooking.
