- 2 pounds bone-in, skin-on chicken thighs
- Salt and pepper to taste
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1 thumb-sized piece of ginger, grated
- 8 ounces mushrooms (cremini or shiitake), sliced
- 2 tablespoons butter or ghee
- 1 lemon, juiced
- 1 teaspoon ground turmeric
- 1 cup chicken stock
Instructions
- Pat chicken dry and season with salt, pepper, and a light dusting of turmeric.
- Heat a skillet over medium-high heat, add butter or ghee until shimmering.
- Place the chicken skin-side down and sear for 6–8 minutes, then flip and brown briefly on the other side; set aside.
- Add onion to the skillet and sauté until translucent, then add garlic and ginger, stirring for 1 minute.
- Add mushrooms and sauté until they release moisture, caramelizing for 5–7 minutes; season with salt and pepper.
- Sprinkle in remaining turmeric, pour in chicken stock, and scrape the fond from the pan.
- Return chicken to skillet, skin-side up, reduce heat to medium-low, cover, and simmer for 15–20 minutes or until chicken reaches 165°F.
- Finish with lemon juice and a knob of butter for shine, adjusting seasoning as needed.
Notes
For extra flavor, consider marinating the chicken in yogurt, turmeric, and salt for 30–60 minutes before cooking.
