Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 cups fresh cranberries, chopped
  • 2 tablespoons orange zest
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. Cream the butter and sugar together until light and fluffy.
  4. Mix in the eggs one at a time, followed by the vanilla extract.
  5. In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
  6. Gradually fold dry ingredients into the wet mixture until just combined.
  7. Gently stir in the cranberries and orange zest.
  8. Scoop tablespoon-sized portions onto prepared baking sheet.
  9. Bake for 12-15 minutes or until edges are golden brown.
  10. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Chill the dough for 30 minutes before baking for thicker cookies. Use fresh cranberries for the best flavor, but dried cranberries can be substituted.
