Ingredients

- 1 bunch kale (lacinato or curly)
- 2 carrots, grated or thinly sliced
- 1 apple, diced (Granny Smith for a tangy bite)
- 1 avocado, diced
- 1/4 red onion, finely chopped
- 1/2 cup dried cranberries or raisins
- 1/2 cup nuts (walnuts or almonds)
- 1/2 cup feta or goat cheese
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Prepare the kale by removing the tough stems and slicing the leaves into thin ribbons.
- Massage the chopped kale with a pinch of salt to tenderize it.
- Chop and combine the grated carrots, diced apples, red onion, dried cranberries, and nuts with the massaged kale.
- Prepare the dressing by whisking together olive oil, lemon juice, garlic, salt, and pepper.
- Dress the salad with the dressing and toss gently to combine.
