Ingredients

  • 1 bunch kale (lacinato or curly)
  • 2 carrots, grated or thinly sliced
  • 1 apple, diced (Granny Smith for a tangy bite)
  • 1 avocado, diced
  • 1/4 red onion, finely chopped
  • 1/2 cup dried cranberries or raisins
  • 1/2 cup nuts (walnuts or almonds)
  • 1/2 cup feta or goat cheese
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Prepare the kale by removing the tough stems and slicing the leaves into thin ribbons.
  2. Massage the chopped kale with a pinch of salt to tenderize it.
