A delicious and irresistible tart combining rich chocolate with the vibrant tartness of cranberries, perfect for any gathering.


Ingredients

  • 1 ¾ cups all-purpose flour
  • ⅓ cup powdered sugar
  • ½ cup unsalted butter, cold and cubed
  • 1 egg yolk
  • 12 tablespoons cold water
  • 8 ounces dark chocolate (at least 70% cocoa), chopped
  • ¾ cup heavy cream
  • 2 tablespoons unsalted butter
  • 1 cup fresh cranberries (or dried cranberries if needed)
  • ⅓ cup sugar

Instructions

  1. Prepare the Crust: In a large bowl, whisk together flour and powdered sugar. Cut in the cold butter until the mixture resembles coarse crumbs, then stir in the egg yolk. Gradually add cold water until the dough comes together. Chill for 30 minutes.
  2. Preheat the Oven: Preheat your oven to 350°F (175°C).
  3. Roll Out the Dough: Roll the chilled dough on a lightly floured surface to fit a tart pan. Press into the bottom and up the sides. Prick the base with a fork.
  4. Blind Bake the Crust: Line the crust with parchment and fill with pie weights or dried beans. Bake for 15-20 minutes, until golden. Remove weights and let cool.
  5. Make the Filling: In a small saucepan, heat cream and butter over medium heat until just simmering. Remove from heat and stir in the chopped chocolate until melted and smooth.
  6. Combine Cranberries and Sugar: In a bowl, mix fresh cranberries with sugar and fold into the chocolate ganache. Pour mixture into the cooled tart crust.
  7. Bake Again: Return tart to the oven and bake for an additional 15-20 minutes, until set. Allow to cool completely.
  8. Chill and Serve: Refrigerate the tart for at least two hours before serving to enhance flavor.

Notes

Serve with a dollop of whipped cream or a scoop of vanilla ice cream. Pair with dessert wine or coffee for an elevated experience.
