A comforting bowl of Chicken Ramen that brings layers of taste and warmth to the table, making it perfect for family gatherings and casual get-togethers.

Ingredients

Scale
  • Chicken thighs or breasts
  • Fresh ramen noodles (or dried if unavailable)
  • 4 cups chicken stock
  • 2 cups water
  • 3 tablespoons soy sauce
  • 2 tablespoons miso paste
  • 2 cloves garlic, chopped
  • 1 inch ginger, chopped
  • 2 scallions, sliced
  • Bean sprouts for topping
  • Shiitake mushrooms, sliced for topping
  • Soft-boiled eggs for topping
  • Fresh herbs for garnish

Instructions

  1. Prepare the Broth: In a large pot, heat a tablespoon of oil over medium heat. Add chopped garlic, ginger, and scallions, cooking until fragrant (about 2 minutes). Pour in chicken stock and water, followed by soy sauce and miso paste. Bring to a simmer.
  2. Cook the Chicken: Season chicken with salt and pepper, then add to the broth. Let simmer gently until cooked through (about 25 minutes). Remove chicken, allow to cool slightly, then shred.
  3. Prepare the Noodles: Cook ramen noodles according to package instructions. Drain and set aside.
  4. Assemble: In each serving bowl, place ramen noodles. Ladle hot broth over noodles, then add shredded chicken.
  5. Top It Off: Add sliced soft-boiled eggs, shiitake mushrooms, bean sprouts, and chopped herbs.
  6. Serve and Enjoy: Serve hot and enjoy the comforting warmth with each slurp!

Notes

For a vegan version, substitute chicken with tofu and use vegetable broth. Add a splash of sesame oil for extra flavor.
