- Fresh ramen noodles (or dried if unavailable)
- 4 cups chicken stock
- 2 cups water
- 3 tablespoons soy sauce
- 2 tablespoons miso paste
- 2 cloves garlic, chopped
- 1 inch ginger, chopped
- 2 scallions, sliced
- Bean sprouts for topping
- Shiitake mushrooms, sliced for topping
- Soft-boiled eggs for topping
- Fresh herbs for garnish
Instructions
- Prepare the Broth: In a large pot, heat a tablespoon of oil over medium heat. Add chopped garlic, ginger, and scallions, cooking until fragrant (about 2 minutes). Pour in chicken stock and water, followed by soy sauce and miso paste. Bring to a simmer.
- Cook the Chicken: Season chicken with salt and pepper, then add to the broth. Let simmer gently until cooked through (about 25 minutes). Remove chicken, allow to cool slightly, then shred.
- Prepare the Noodles: Cook ramen noodles according to package instructions. Drain and set aside.
- Assemble: In each serving bowl, place ramen noodles. Ladle hot broth over noodles, then add shredded chicken.
- Top It Off: Add sliced soft-boiled eggs, shiitake mushrooms, bean sprouts, and chopped herbs.
- Serve and Enjoy: Serve hot and enjoy the comforting warmth with each slurp!
Notes
For a vegan version, substitute chicken with tofu and use vegetable broth. Add a splash of sesame oil for extra flavor.
